This dish is good for a party or as an appetizer. Personally, I like to cook a whole chicken for different kinds of food, because you can get great broth from a whole chicken, and the meat can be used for several different dishes. So, today I will show you one of those dishes. If you don’t want to cook the whole chicken, you can just use one chicken breast for this recipe, cooking it any way you like, but if you have some left over chicken, this is a great way to use it too. 😉 Somebody pointed out that recently I have been posting a lot of fried foods, so here is a healthy recipe. This recipe includes many different kinds of healthy vegetables, and the sauce is mostly good for health too. How does it sound? 😉 I hope you enjoy this recipe. 🙂

Main Ingredients
- 1 Cup Cooked Chicken Breast
- ⅓ Cup Carrot
- ⅓ Cup Cucumber
- ⅓ Cup Red Cabbage
- ⅓ Cup Leaf Lettuce
- ⅓ Cup Asian Pear or Apple
- ⅓ Cup Yellow Sweet Pepper
Sauce Ingredients
- ½ Tbsp Korean Mustard Paste
- 2 Tbsp Honey
- 1 Tbsp Vinegar
- 1 Tbsp Lemon Juice
- 1 tsp Garlic
- ⅛ tsp Salt
Directions
Prepare 1 cup of cooked chicken breast. It will be best to use freshly cooked chicken for better flavor. However, using leftover chicken is good too. 😉 Shred the chicken thinly.
In a small bowl, mix all of the ingredients for the sauce: ½ Tbsp mustard paste, 2 Tbsp honey, 1 Tbsp vinegar, 1 Tbsp lemon juice, 1 tsp garlic, and ⅛ tsp salt.
Cut the skin off of the cucumber, leaving some of the cucumber on the skin. We will use the skin part for our dish. This will make the dish more colorful. You can eat the center as a snack while you are cooking. 😉 I did. lol
Julienne ⅓ cup each: carrot, cucumber, red cabbage, Asian pear, yellow sweet pepper, and leaf lettuce. If you cannot get an Asian pear, you can use a sweet apple instead.
Serve it on a big round plate with the mustard sauce in the center. Divide each of ingredients into 3 groups and place them in the same order. This colorful dish makes your eyes and mouth happy. 😉
Give each individual a serving dish, so that each person can get some of the vegetables and chicken along with some sauce. Mix everything together before eating. The combination of vegetables, chicken, and the sweet mustard sauce tastes great. Try it someday. 😉

How beautiful. Is this, by chance, an example of royal cuisine? I’d heard that Royal Court Cuisine was very colorful and surprisingly mild, but I’ve never been exposed to it before. All those vegetables look so delicious. I could roll it up in a spring roll to take to lunch as well. Yum.

it is called 연겨자 (=YeonGyeoJa) in Korean… any Korean brand will be good.. however mine was 청정원 (ChungJungWon)

But there is no Korean mustard here in Paris, so I used regular mustard, and because I’m a vegetarian I used seitan instead of chicken… but the sauce and the vegetables were so yummy! 5 stars for your recipe!
