Sweet corn salad is a popular side dish that Western restaurants such as KFC and Pizza Hut serve in Korea. It might seem strange since this recipe is not served in the USA, but many Western restaurants change their menu according to local tastes. That means this recipe is a Korean styled dish, even though it was popularized by Western restaurants. The flavor is very good when eating greasy food. The onion and sweet pepper, in a sweet and sour sauce, helps to remove the oily taste from your mouth. It also can be good as an appetizer or side dish for other kinds of food. ๐

Main Ingredients
- 1 Can Sweet Corn (15 oz)
- 2 Tbsp Onion
- 1 Tbsp Green Sweet Pepper
- 1 Tbsp Red Sweet Pepper
- 4 Tbsp Mayonnaise
- 1 Tbsp Sugar
- ยฝ Tbsp Vinegar
- 2 Pinches Salt
- 1 Pinch White or Black Pepper
Directions
Drain the liquid from one can of sweet corn (15 ounce can). You will get about 1โ cup of sweet corn kernels.
Chop 2 Tbsp of onion, 1 Tbsp of green sweet pepper, and 1 Tbsp of red sweet pepper finely.
Combine 4 Tbsp of mayonnaise, 1 Tbsp of sugar, ยฝ Tbsp of vinegar, 2 pinches of salt, and 1 pinch of white or black pepper in a mixing bowl. Mix everything together. Taste the sauce. Depending on your tastes, you can make it a little more sour or sweet with vinegar or sugar.
Add the sweet corn and the other vegetables to the sauce. Mix everything together.
Store it in the refrigerator and serve it chilled, or the next day.
We enjoyed it with Aeri’s Kitchen Korean styled fried chicken the other night. It was very delicious. Try it someday. ๐

Hi, may I know what type of vinegar to use? Must it be either brown rice or apple vinegar? Or any type of vinegar will do?

I used Korean brand, Sempio… apple vinegar.. ^^ but you can use other vinegar you have also..
Is there an alternative i can use for mayonnaise?

Mayonnaise is the main flavoring ingredient.. so I don’t know what you can replace to it. ^^;; Because then it will change the flavor.
I used Miracle Whip, which tasted great to me, but then it would change the taste from the original. I’m just not a big mayo person, so I usually use MW when I can get away with it! I also don’t like red bell pepper, so I just put in extra green pepper. Not as festive, but I thought it was good : )
