The rice cake soup called “tteokguk” in Korean is one of my favorite Korean meals. We usually eat this soup on New Year’s day, but you can eat it anytime you want. You can make the soup with different kinds of meat such as beef or oysters. Today, I will make oyster rice cake soup the way my mom usually made it for us.

Main Ingredients
- ⅔ Cup Fresh Oysters (7 oz)
- 3 Cups Oval Rice Cakes (1 lb)
- 4 Cups Water
- 2 Eggs
- 2 Green Onions
- 2-3 Sheets Dried Laver
- 1 Tbsp Minced Garlic
- ½ tsp Salt
- ½-1 tsp Sempio YounDoo (Optional)
Directions
Obtain about ⅔ cup of fresh oysters. Rince them in cold water once and drain the water.
Pour 4 cups of water into a pot, and then add the oysters.
Occasionally remove the foam from the surface of the broth; doing that helps to improve the flavor.
Once the broth starts to boil, add 3 cups of rice cakes. Because of the rice cakes, the temperature of the soup will go down.
When the soup starts to boil again, add 1 Tbsp of minced garlic and ½ tsp of salt. Cook for about 12 minutes on medium-high: until the rice cakes become soft.
Meanwhile, prepare the toppings for the soup. Break 2 eggs and mix in 2 pinches of salt.
Drizzle a little bit of cooking oil in a nonstick pan, and then wipe the surface with a paper towel gently. Pour the egg mixture in the pan and cook it on low until both sides of the egg are cooked, but not browned.
Cool the fried egg and cut it into thin strips. Slice two roasted dried laver sheets into thin strips with scissors.
Taste it; if the saltiness needs adjusted, add some salt, fish sauce, or YounDoo. I added ½ tsp of YounDoo, which it gave extra flavor. So if you have YounDoo, try it. 🙂
Chop 2 green onions into ½ inch pieces and add them to the soup. Cook for 2 more minutes, and then turn off the heat.
Pour some rice cake soup into a serving bowl, and decorate it with the egg and laver toppings. Mix everything together before eating. It was very delicious. Seriously, I can eat rice cakes soup everyday. hehe … Enjoy! 🙂

Will it work the same with frozen oysters? I tried making oyster pancake once and found the smell rather fishy. Any tip to overcome this?

Rinse the oyster several times in cold water before cooking. Sometimes, I add more garlic to overcome the fishy taste. I’ve never used oyster for cooking before, but I think that people use it for cooking and that’s why they sell it.. so try it. 🙂 Thanks

Sorry to ask ths question. My son’s girlfriend is on vacation in Korea and a friend’s mother is making her some kimchi sauce to bring home so she can just add the salted cabbage. I tired this dish in a typical family style korean restaurant in hawaii. I’m sure the korean name is corrected, maybe i can write down their english description to u later.
It is a cold dish made with just beef tendon with sauce. I can tell the sauce has chopped onion, red pepper and green bell pepper(maybe some kind of similar green veggie?!?)with soy sauce, something sour(vinegar?!?) and sweet(syrup or sugar?!?) and/with something else in it.
I tired to make for once;however, it tasted little bit different.
Maybe i can take pic and show u next time if i go again.
