Red bean ice cream is one of the things you can make with homemade red bean paste. So if you decided to try my recipe for that, this ice cream recipe will be a good use for it. We have a very popular red bean ice cream bar called “bibibig” in Korea. It has a good red bean flavor along with a sweet milky flavor. It is harder than normal ice cream. My recipe tastes very similar to bibibig. Yummy~~~ 🙂 I made this recipe a while ago, but because of our summer vacation, I am posting it almost too late, since it is almost fall now. However, I hope you can still enjoy my recipe this year.
Yield: 7 Ice Cream Bars

Main Ingredients
- 1 Cup Red Bean Paste
- 1 Cup Whipping Cream
- ½ Cup Milk
- 3 Tbsp Sugar
Directions
Obtain 1 cup of red bean paste. You can use my homemade red bean paste recipe, or you can use a can from the store.
Combine the red bean paste, 1 cup of whipping cream, ½ cup of milk, and 3 Tbsp of sugar in a mixing bowl.
Mix everything together with a whisk.
Taste it, because you might want to increase the amount of sugar. Once it hardens, it will taste a little less sweet, so take that into consideration. Pour the mixture into popsicle molds.
You will get about 7 to 8 popsicles.
Freeze it for at least 6 hours in your freezer.

I made your red bean paste before and made some red bean mochi with some of it…now as the weather gets hotter I thought of making soem red bean ice cream.!! ^^ Now I am waiting for it to freeze– but I changed the recipe a bit because I can’t have dairy (so sad!) and also I am on a diet. So I mixed the red bean paste with 1 cup of unsweetened soy milk and about 4 tbsp of sugar. I will tell you how it comes out.

P.S. I only recently tried a red bean ice cream with was BB Big Bar… I liked it but looking at the ingredients I definately thought it would be healthier to make your own. 🙂

I only have 1 mold that fits 4 at one go, so I wonder, can I make the whole thing, separate into 2 batches. Put 1 batch to fridge, pour 1 batch, wait for the 1st mold to set (6hrs), and pour the rest to make second batch? Or the fridge will cause it to be slightly iced?

Yes, you can do that.
You can also just pour rest of the ice cream mixture to a glass container and freeze it. 🙂 Thanks

I watched a Korean show where they made red bean soup (팥수프) and I think it was the same recipe only you boil it on low heat instead of freezing it. I haven’t tried it yet, but I will this weekend!
