There are different kinds of delicious Korean pancakes such as zucchini jeon and shrimp jeon. So, what about combining them together in a fun and fancy shape? A delicious way to enjoy zucchini and shrimp together is called AeHoBak SaeU Jeon in Korean.

Main Ingredients:
- 1 Medium-sized Zucchini (6 oz) (⅛-¼ tsp Salt)
- 20 Small Shrimps (2 Pinches Salt, 2 Pinches Black Pepper)
- ¼ Cup All Purpose Flour
- 1 Egg (1 Pinch Salt)
- 2 Tbsp Cooking Oil
- 1 Tbsp Red Hot Pepper
Directions
These are all the ingredients for this recipe.
Obtain about 20 small cooked shrimps and remove the tails. If you have not cooked the shrimp, cook them in boiling water for about 2 minutes on high and remove the shells and the tails.
Season the shrimp with 2 pinches each of salt and black pepper.
Let them set for a few minutes while preparing the other ingredients.
Slice 1 medium size zucchini into ¼ inch slices. If you want, you can also chop about 1 Tbsp worth of red hot pepper into little chunks.
Cut the zucchini into a ring shape by pressing it with the back of a cookie cutter or similar-sized bottle cap.
Do not throw away the middle part of the zucchini, but use it
for cooking soybean paste soup (a.k.a DwenJangJjiGae) or Korean zucchini pancakes (a.k.a jeon).
Now, break 1 egg and add 1 pinch of salt. If you want to fry the center part of the zucchini too, prepare 2 eggs with 2 pinches of salt.
Put about ¼ cup of all purpose flour into a plastic bag and put the seasoned zucchini in it.
Gently shake the bag to cover the zucchini with the flour evenly.
Dip the flour covered zucchini in the egg mixture and coat it.
Add 2 Tbsp of cooking oil in a heated nonstick pan.
Place all the egg covered zucchini in the pan. Fill the bottom of the zucchini rings with a bit of the egg mixture so that the Jeon can get a nice shape and have good flavor.
Then, put each piece of shrimp in the center of the zucchini.
Put one or 2 pieces of the red hot pepper in the center of the shrimp to get better flavor and color for the dish. Fry the zucchini jeon for about 6 minutes on medium, or until they become nicely golden brown.
6 minutes later, flip them over and fry the other side for another 6 minutes on medium.
They are already seasoned nicely, you do not need dipping sauce. Just serve them as a side dish or eat them plain as a snack when they are still warm. The soft zucchini and chewy and salty shrimp taste amazing with the fried egg outside.
