Avocado is not a traditional Korean ingredient. However, recently more and more Koreans are enjoying avocado in their daily meals since it is supposed to be healthy and good for their diet. So, I want to introduce one of the many yummy ways to enjoy avocado in Korean meals as a side dish. The nutty flavor from the avocado is mixed with tasty soy sauce, onion, and hot pepper to make a great combination. It is very hard to not make it because it is very delicious.😉

Main Ingredients:
- 2 Large Avocados
- ½ Cup Onion
- 2 Tbsp Green Hot Pepper
- 2 Tbsp Red Hot Pepper
- 1 tsp Sesame Seeds
Sauce Ingredients:
- ¾ Cup Water
- ⅓ Cup Soy Sauce
- 2 Tbsp Sugar
- 2 tsp Vinegar
Directions
To make the special sauce for this side-dish, combine ⅓ cup soy sauce, ¾ cup water, 2 Tbsp sugar, and 2 tsp vinegar. Mix them well until the sugar dissolves.
Now, chop the veggie ingredients such as ½ cup worth of an onion and 2 Tbsp worth of each the green hot peepers and red hot peppers thinly.
Next, get 2 large avocados. It is nice to use them for this recipe a little firm but not completely ripened.
To remove the skin, cut the avocado in half.
Remove the seed with a knife. (You can see the video instruction about how to do it.)
Scoop out the avocado with a spoon (now the avocado skin is off).
Slice the avocados into ½ inch thick pieces.
Prepare a glass rectangular storage container and place the avocado in it.
Put all the chopped veggies evenly on top of the avocados.
Pour the sauce over the veggies.
Finally, sprinkle 1 tsp of sesame seeds.
Cover the container with some plastic wrap.
Cover it with a lid, and then keep it in the refrigerator overnight. You can even eat it in a couple of hours.
It will be best to eat in a few days, so just make a smaller amount each time and enjoy. 🙂
