A salad is a great way to enjoy leafy green vegetables. Because of that, different cuisines have many varieties of salad dishes. Today I want to share how we Koreans enjoy our leafy green vegetables. This is a little bit spicy, salty, sweet, and sour. It is called “상추 겉절이 (SangChu GeotJeolI)” in Korean.

Main Ingredients:
- 3 Cups Spring Mix Leafy Vegetables (2.5 oz)
- ½ Cup Onion
- ⅓ Cup Cucumber
- 1 Tbsp Red Hot Pepper
- 1 tsp Sesame Seeds
Seasoning Ingredients:
- 1 Tbsp Green Onion
- ½ Tbsp Soy Sauce
- ½ Tbsp Water
- 1 tsp Hot Pepper Powder
- ½ tsp Sugar
- ½ tsp Vinegar (optional)
- ½ tsp Sesame Oil
- ½ tsp Garlic, Minced
Directions
First we need about 3 cup worth of lettuce. Today, I will use this “Spring mix leafy vegetables” to make it even easier. If you use normal lettuce, you can just pick out any kinds of lettuce you like and cut them into bite sized pieces with your hands or a knife.
For extra vegetables, chop ½ cup of an onion, ⅓ cup of a cucumber, and 1 Tbsp worth of a red hot pepper into thin slices. If you don’t want to, you can skip any of these three veggies because the main ingredient is lettuce.
In a large mixing bowl, add all the seasoning ingredients such as 1 Tbsp of finely chopped green onion, ½ Tbsp soy sauce, ½ Tbsp water, 1 tsp hot pepper powder, ½ tsp sugar, ½ tsp vinegar (optional), ½ tsp sesame oil, and ½ tsp of minced garlic.
Mix everything well. If you want a more savory flavor and love seafood, you can use fish sauce instead of soy sauce. But if you want more refreshing flavor, use soy sauce. 🙂
Put all the chopped veggies into the bowl.
Then, mix everything gently. Since the lettuce is very tender, it is important not to mush them.
Finally, sprinkle 1 tsp of sesame seeds over it before serving.
You can enjoy it as a side dish with rice, soup, and/or other side dishes. However, you can also make a bibimbap with this side by simply putting this side along with some rice in a bowl. Then, put some fried egg on top, add some gochujang for taste and drizzle a little bit of sesame oil. 🙂 Mix everything together and enjoy. Yummy !!! 🙂 Try this someday.
