What kind of dishes do you cook when there are leftover vegetables and other ingredients in the refrigerator? Today, I will introduce a delicious toast that Koreans enjoy using common ingredients at home. The taste may be unfamiliar to you, but in Korea, a combination of ketchup, mayonnaise, pizza cheese, vegetables, and lunch meat is popular. I hope you all enjoy this too. Now let’s make a delicious pizza toast that is so pretty in color and shape.

Main Ingredients:
- 8 Slices of Sandwich Bread
- 1 Generous Cup of Shredded Mozzarella Cheese
- ½ Cup Sweet Corn
- ⅓ Generous Cup Onion
- ⅓ Cup Ham or Uncured Turkey Bacon
- ¼ Cup Red Sweet Pepper
- ¼ Cup Green Sweet Pepper
Seasoning for Rice Ingredients:
- Some Ketchup
- Some Mayonnaise
- Some Dried Parsley
- Alternative: Pizza Sauce or Tabasco Chipotle Sauce
Directions
These are some leftover ingredients I found in my refrigerator.
Cut ⅓ generous cup worth of an onion, ⅓ cup of ham or uncured turkey bacon, and cut ¼ cup each of red and green sweet pepper into little cubes.
We also need ½ cup of canned sweet corn.
Mix all the chopped ingredients together.
Now, place 1 slice of sandwich bread on a cutting board or plate and put about 2 generous Tbsp worth of the vegetable mixture. Evenly spread it on the bread.
We will season this toast with some mayonnaise and ketchup. You can use a small zipper bag (snack bag) by cutting a little tiny bit off the edge of the bag and filling the bag with sauces. Put your desired amount of mayonnaise and ketchup on the vegetables. If you want more pizza flavor, you can use pizza sauce instead. My husband also found out that Tabasco Chipotle Sauce can tastily replace the ketchup and mayonnaise.
Next, put 2 generous Tbsp of mozzarella cheese or pizza cheese evenly on it.
Then, sprinkle some dried parsley.
Preheat a pan and lightly rub the butter in the heated pan to melt. You can skip this step and place the toast directly in the oven, but I recommend to rub the butter since it adds a bit of buttery flavor to the toast and therefore makes it crispier.
Make sure that your pan is preheated well. Place the toast on the pan.
Cover the lid for the pan and cook it for about 3 minutes on medium-low.
After 3 minutes, the cheese will just start to get soft but not melted and the bottom of the bread will be slightly crispy and golden brown but burnt. Now, transfer the toast to an oven tray and place it in the oven to broil for about 4-5 minutes. The cooking time may vary slightly depending on the temperature of the oven, so bake it until the cheese is properly golden brown.
My kids quickly devoured 2 pieces of toast and asked for more. This recipe makes a total of 8 toasts, so you can try out the 3 different sauces I suggested (Ketchup & Mayonnaise, Pizza Sauce, or Tabasco Chipotle Sauce) and let me know which one was the best.
