Walnut ice cream was another big hit with my husband. The sweet and nutty flavor is great. My homemade ice-cream recipes are very simple and delicious. It is easy to just buy ice cream in a store, but with all of the different kinds of chemicals they add to it, it is worth it to make ice cream at home. Try this recipe, and soon you will find out how easy it is to make. 🙂

JangAJji (장아찌) is the Korean name for a type of pickle. When making pickles in Korea, the pickling liquid can be based on vinegar, like Western pickles, or it can be based on soy sauce. The recipe that I’m going to share today is based on soy sauce. The pickling liquid itself can be very useful in making different kinds of pickles, depending on your choice of veggies. This recipe uses cucumbers, onions, and hot peppers. You can add garlic or sesame leaves too. It is very easy to make as well and is convenient for serving with each meal.

Cold soybean noodles (콩국수, KongGukSu) is one of the most popular summer menus items in Korea. The homemade creamy soybean sauce tastes great with the noodles, fresh cucumbers, and tomatoes. You can also buy premade soybean sauce for your convenience, but it is not as good as making it from scratch. If you already tried these noodles in Korea, you may find a difference in my recipe because I used sugar. I’m from southern Korea, and in our hometown, it is common to add sugar to this dish whereas other places in Korea normally don’t. So, if you want, you can skip the sugar.
Dear friends, I’m in my 16th week pregnancy now. My morning sickness is gone and my appetite is coming back. I feel hungry more often and sometimes I feel my baby’s cute movements. LA ChapSsalTteok (LA 찹쌀떡) is a fusion food that originated from Los Angeles Korean immigrants who were craving Korean rice cakes. It was difficult for them to find the necessary ingredients to make Korean rice cakes. So, they started baking rice cakes using ingredients that can be easily found in America. Luckly for us, the result was very good and now we can try this new variation on rice cakes. These are a little crispy on the outside and chewy on the inside. The various nuts and dried fruits taste good, along with the creamy taste of the rice. My husband likes many different kinds of Korean food, but rice cakes is not one of them. Interestingly, he tried this and gave it an A+. Of course, he at them with maple syrup. 😉 He said they are similar with blueberry pancakes. I do not know what you will think of them, but if you want to try a healthier dessert, and if you like rice cakes (or even if you don’t!), I highly recommend you to try these someday. 🙂

Do you have any specific food that brings back good memories from your childhood? My mom used to cook delicious snacks for us when we were little. This Korean sweet potato snack was one of them. Since it is a deep-fried food, she did not make it often, which made us more excited when we had the rare chance to eat it. I remember begging her for a piece that just came out of the boiling oil because I could not wait any longer. lol… The funny thing is my son did the exact same thing even though he never ate it before. Maybe it was the delicious smell that made him want to try it so badly. We think he is a little too young to be eating deep fried foods, but someday he might get his own fond childhoods memories about this food as I did. Every now and then, I crave my mom’s Korean sweet potato twigim. Now, I can make it for myself and it is good enough to tame my desires for my mom’s twigim. 😉

Egg bread, or egg muffins, is old-fashioned street food in Korea. It is especially popular in the cold winter. Freshly baked steaming egg muffins will melt your heart. They are sweet with a slightly salty whole egg inside. They taste very delicious. They are a little unique and fun to make. Of course, they are very easy to make too.

Sweet red bean Ppang, called “DanPatPpang” in Korean, is an old-fashioned bakery product. There are many different kinds of sweet foods that use red bean paste. This is one of the most popular ones. If you have a bread machine, you can make this very easy dessert at home. I will use my homemade red bean paste again in this recipe. 😉 Warm, freshly baked bread tastes very good with bean filling.

Red bean porridge (팥죽, PatJuk) is commonly eaten on the shortest day of the year in Korea. This warm and sweet porridge is a great meal for any winter day too. If you make your own red bean paste at home, or have canned red bean paste, it is a pretty easy recipe to make. The sweet and nutty flavors from the red bean paste, along with the chewy rice balls, taste great together.

Tofu is a very common ingredient in Korean cuisine, and tofu jeon is a delicious way to eat it. Tofu and garlic go together well. Like my other recipes, it is a very simple and tasty dish to try. Spicy Potato Guk (매운 감자국) is a very simple and useful daily soup that is especially good on cold days because the spicy broth makes your body warm. Many people usually have potatoes and onions on hand. So if your groceries are running low, and you want to cook something with what you have, this is a great recipe for that. 🙂 If you love potatoes and spicy food like me, try it someday.
