YuBu ChoBap (유부 초밥)is a Korean styled Japanese food. Korea and Japan are very close in distance and there were various relationships with each other throughout history. As a result, there are some food ideas that Korea and Japan borrowed from each other, such as Korean styled chap-ssal tteok (mochi) that was originally from Japan. Another example is Japanese styled kimoochi (kimchi) that was originally from Korea. Anyway, when I was little, I’ve never saw anybody eating yubu chobap or other kinds of sushi, then at some point, people started to eat sushi and it became popular in Korea. Since the preparation for this dish is easy, people often make this for picnics (along with Kimbap) or for a party. The rice tastes similar to the rice for sushi, which has a sweet and sour flavor. You can make everything from scratch, but there are some companies that sell a ready-made pack. All you need to do is cook the rice, some vegetables (if you want extra vegetables), and that pack. So today, I’m going to show you how to use that package. Depending on your taste, you can add chopped burdock root or any other kinds of vegetables that you like. I tried different kinds of sweet peppers for this recipe, and I enjoyed eating this. If you like sushi, you might like this dish.

- Cho (초) = Vinegar

Main Ingredients
- 1 Pack Seasoned Soybean Curd (Including Sauce)
- 2 Cups Cooked Short Grain Rice
- 2 Tbsp Finely Chopped Onion
- 1 Tbsp Finely Chopped Carrot
- 1½ Tbsp Finely Chopped Green Sweet Pepper
- 1½ Tbsp Finely Chopped Red Sweet Pepper
- 1½ Tbsp Finely Chopped Yellow Sweet Pepper
- Some Salt for the Vegetables
Directions
Obtain a package of seasoned soybean curd with sauce.
Finely chop the onion, carrot, and 3 different kinds of sweet peppers.
Fry the onion and carrot on high without oil.
When the onion and carrot are almost cooked, add the sweet peppers and fry for about 30 seconds more.
Add some salt to taste. This is ready for mixing into the rice.
Squeeze the liquid out of the seasoned soybean curd. This package is already prepared, so simply use the soybean curd without cooking it.
In a large bowl, add 2 cups of cooked rice, and add the sauce from the pack. You can make your own sauce if you only buy the soybean curd, but this package already has the sauce for the rice in it.
Add the dried vegetable pack in it, and stir it gently.
Add the fried vegetables into the rice and mix. This makes the rice very colorful, and gives it a better taste.
Open the soybean curd as pictured. It looks like pocket or pita bread.
Firmly pack the rice into the curd.
It looks very delicious. You can serve this with pickled ginger, onion, or garlic. Enjoy! 🙂

I know that other asian country like China also use soybean curd for cooking, but this chobap is from Japan. Yep.. definitely, the vegetables add better flavor..so try this way someday, when you don’t feel lazy..hehe thanks !! 🙂

To mix the seasoning with rice better.. it’s good to use fresh (just cooked ) rice.. but to serve.. it’s okay if it’s cool.. ^^

I just bought a package and there’s just too many to finish in one meal so I was wondering if we have to eat this cold or hot. If I make the whole package, can I just leave it in the fridge?

Personally, I think it tastes better when it’s cool. You can keep in the refrigerator..however, the rice becomes hard in the refrigerator after few hours later then it will not taste good at all. What I want to suggest you is.. just keep the soy bean curd itself in the refrigerator without making chobap..and whenever you want to make them, just make rice part and made chobap. Thanks
