Today, I will show you how to make a pickled cucumber side dish. You can make your own pickled cucumbers at home; you can also simply buy pickled cucumbers in a Korean or Asian store. This side dish is simple to make and it can be used in all four seasons; however, it is especially good during the summer. Someday, I will also post a recipe for homemade pickled cucumbers. As always, I hope that you will like this.
Yield: 1 Pint
Short Korean Lesson
- OiJi (오이지) = Pickled Cucumbers
- SulTang (설탕) = Sugar

Main Ingredients
- 4 Korean Pickled Cucumbers (2 Cups)
- 2 Tbsp Red Pepper Powder
- ½ Tbsp Sugar
- 2 Tbsp Sesame Oil
- 1 Tbsp Minced Garlic
- 2 Tbsp Finely Chopped Green Onions
- ½ Tbsp Sesame Seeds
Directions
Cut 4 pickled cucumbers thinly. You will get about 2 cups.
Rinse them in cold water once.
Drain the water.
Squeeze out the water.
In a bowl, add the pickled cucumbers. Add 2 Tbsp of red pepper powder, ½ Tbsp of sugar, 2 Tbsp of sesame oil, 1 Tbsp of minced garlic, 2 Tbsp of finely chopped green onions, and ½ Tbsp of sesame seeds.
Mix everything together.
Wow, this is mouth watering! It looks delicious. For today’s lunch, I ate this side dish. I recommend that you try this: mix your rice with cold water, and eat it with this side dish. It is good for a hot summer day’s lunch when you feel lazy to cook a lot. Thanks! See you soon again.

I tried pickling cucumbers in soysauce one time from a recipe on the internet and for some reason, my cucumbers turned out mushy and not crunchy. I guess I just have to keep trying.

hi! if u can’t find korean red pepper powder, u can use cayanne pepper instead. read it somewhere that it can be interchangable.

I dunno about that…. Cayenne pepper is super finely ground and the Korean pepper powder is generally much coarser. It also has a VERY different flavor profile, so I wouldn’t call them “interchangeable.” It’s probably an acceptable susbtitute though! 🙂

Aha, I can guess what you want… at first, I can’t get fresh tuna for sashimi around here..and I don’t like raw fish much…but for the sauce part, there is similar food …using boiled squid..and some vegetables… I will post it someday… just you can use fresh tuna instead of boiled squid..and use same sauce.. it will give you same flavor.. spicy, a little sour and sweet flavor.. yum~~~ hehe.. thanks !!! 🙂

Well..it is a little difficult to say for servings..since it is not main dish…it’s more like side or snack food… 1 pint is about 2 cups… hope that helps a little .. thanks
