Hi, Are you looking for a fun and delicious idea for your lunch box? Well, I’ve got something cool and tasty for you. It looks complicated and neat, but actually it is easy to make. It can be a fun project that you can enjoy making with your kids.

Main Ingredients:
- 1½ Cups Cooked Short Grain Rice
- 8 Bacon Strips
- ¼ Cup Onion
- ¼ Cup Zucchini
- ¼ Cup Sweet Peppers (Red and Yellow)
- 2 Tbsp Carrot
- 2 Tbsp Green Onion
- 1 tsp Cooking Oil
- 1 tsp Sesame Oil
- 1 tsp Black Sesame Seeds
- ⅛ tsp Salt
Other Sides:
- Some Well Fermented Kimchi
- Some Pickled Radish Side
- 6 Hard Boiled Quail Eggs
- Some Parsley (For Garnish)
- Some Cherry Tomatoes
Directions
Grab different kinds of color vegetables from your refrigerator and pantry. I found ¼ cup worth of an onion, zucchini, sweet peppers (red and yellow), and 2 Tbsp worth of each a carrot, and green onion. It doesn’t really matter much which vegetables you use, but use 1 cup worth of vegetables total.
Chop all the vegetable ingredients into these fine pieces.
Drizzle 1 tsp of cooking oil on a heated pan and add the onion, carrot, and zucchini in it. Since they are firmer vegetables than the rest, we cook them first. Fry them for 3 minutes on medium-high.
After 3 minutes, add the sweet peppers and the green onion.
Add ⅛ tsp of salt.
Fry them for one more minute. They are ready to be mixed with some rice.
Put 1½ cups of cooked short grain rice into a mixing bowl.
Add the fried vegetables, 1 tsp of sesame oil, and 1 tsp of black sesame seeds in it. You can also use normal sesame seeds.
Mix everything gently. If you are a vegetarian, or do not want to eat bacon, you can eat as it is now by adding some salt to season it to your tastes. It is still very delicious.
To use the bacon, go to the next step. Get a spoonful of the rice mixture.
Form and shape the rice into an oval. Gently hold and press it to make it stay firm several times. You will get about 16 pieces from your rice mixture. If your rice is too sticky to work with, wet your hands with some water.
Cut 8 bacon strips in half to get 16 pieces.
Place a piece of the bacon on a flat surface. Put a lump of rice on the bacon.
Roll the rice with the bacon. Do the same for the rest.
In a heated pan, place the bacon rolled rice pieces. The bacon is greasy so you do not have to add any oil.
Fry for several minutes, until the bacon becomes crispy all the way around. Every now and then, roll the rice in different directions so that the bacon will cook evenly.
All the food is ready, it is time to pack the lunch box. I got this cute Asian looking lunch box on Amazon. I like how it looks and that the 3 layers each have a lid. I will put 6 bacon pieces on one side of the lunch box.
Let’s put 3 of these small paper cups for the side-dishes in this spot.
The first cup is for some of the well fermented kimchi. The next cup is for some of the Korean pickled radish side that I posted in my previous video. It’s very refreshing and delicious, so it is a perfect match for this lunch box. Please check out the recipe. The last cup is for few cherry tomatoes.
In the remaining spot, I want to make a green base with this parsley for the chicks that we made earlier. It is like green grass for them.
Put 3 quail egg chicks on the parsley. They look cozy and happy now.
Sprinkle a little bit of salt on the eggs, so they will taste better.
I put some cute lunchbox forks here and there to be useful and help decorate the lunchbox. It looks beautiful and colorful. The flavor? Of course it’s even better than it looks. Try it someday. If you are going to pack this as a lunch and take it somewhere, I suggest that you wrap the kimchi and pickled radish with some plastic wrap when you put them in the lunchbox so that they will not get scattered all over the place.
