Today is not Korean food, but I’m going to introduce a pasta dish using clams that is popular in Korea. It’s clam aglio olio. Aglio olio is a delicious oil sauce that is flavored by heating olive oil and garlic over low heat. This recipe will help you to make easy and delicious pasta dishes with just a few ingredients in less than 30 minutes. Please try it someday.

Main Ingredients:
- 6 oz Spaghetti (8 Cups Water, 2 tsp Salt)
- 30 Clams (1 lb)
- ¼ Cup Garlic Cloves
- 4 Pieces Dried Peperoncino (½ Generous Tbsp)
- 2 Tbsp Olive Oil
- 1 Tbsp Cooking Wine or White Wine
- 1 Tbsp Green Onion (For Garnish)
Directions
First of all, pour 8 cups of water into a pot. Before the water starts to boil, let’s prepare the rest of the ingredients.
This is the clam, the main ingredient of the day. I’m going to use about 1 lb of precooked clam. Rinse it once in water and drain out the water.
Next, slice ¼ cup of garlic into thin pieces. Cut about 4 dried peperoncino into small pieces. You can use crushed red peppers or any other dried peppers you have instead of dried peperoncino. For garnish, thinly slice 1 Tbsp worth of the green part of the green onion.
Add 2 tsp of salt to the boiling water. Boiling the spaghetti in salt water salts it perfectly and makes delicious pasta. By the way, do you know about Himalayan salt? I started using this pretty pink Himalayan salt for cooking, and I think it’s better for health and taste. So I recommend you to try it too.^^
We need about 6 oz of spaghetti for two servings. When you hold the spaghetti with your hand like this, it is good enough.
Put the spaghetti in boiling water and let it cook for 3 minutes, which is less than the cooking time on the spaghetti box. This brand of spaghetti says to cook it for 10 minutes. So I’ll cook this for 7 minutes on high.
After a few minutes, start making aglio olio sauce. Drizzle 2 Tbsp of olive oil in a pan over medium heat and add garlic. Fry it for 30 second on medium low. It is important to cook garlic oil slowly over low heat.
After 30 seconds, add the dried peperoncino to the garlic oil and fry for another 30 seconds on low heat.
Put the clams in glio olio sauce.
Then immediately add 1 Tbsp of white wine or cooking wine. This helps to remove the fishy taste of the clams. Stir-fry the clams for about 3 minutes on medium heat.
By this time, the spaghetti noodles will be ready.
Before discarding water, set 1 cup of it aside for a while.
Now drain out the rest of the water.
Now the clams are ready to meet the spaghetti.
Add the spaghetti into the pan and stir-fry them with the clams for about 3 minutes on medium heat.
Occasionally stir the spaghetti. If the noodles look dry, then add some of the water we saved earlier into the pan.
3 minutes later, turn off the heat and drizzle about 1 tsp of olive oil over it and mix everything one more time.
Finally, garnish it with the green onion pieces.
The spicy taste of red pepper goes well with garlic oil to make the clam spaghetti even more delicious. You can prepare a simple yet luxurious meal with this pasta by simply adding a green leafy salad or fresh vegetables of your choice. Enjoy!
