This week, I challenged myself to cook something delicious with what I normally have on hand, which is dumpling wrappers, cheese, and canned corn. What I came up with is called Corn Cheese ManDu (콘치즈 만두) in Korean. Not only it is easy and fun to make, the flavor is amazing with just a few ingredients. I am glad that I could use my old dumpling wrappers from my freezer which needed to be used. hehe If you want to try something different with your dumpling wrappers, try this recipe.

Main Ingredients:
- 20 Dumpling Wrappers
- 1 Cup Mozzarella Cheese
- ⅔ Cup Canned Sweet Corn
- 2 Tbsp Onion
- 1 tsp Jalapeño Pepper (Optional)
- 2 Tbsp Mayonnaise
- ½ Tbsp Sugar
Directions
Here are all the ingredients for this recipe except, for the dumpling wrappers. First, finely chop 2 Tbsp worth of an onion and 1 tsp of a jalapeño pepper. I really like the heat from the pepper, and the cheese covers up most of the spiciness, so I highly recommend you add the hot pepper.
Add 1 cup of mozzarella cheese, cup of corn, chopped veggies, 2 Tbsp of mayonnaise, and ½ Tbsp of sugar in a mixing bowl.
Mix everything together.
We also need about 20 dumpling wrappers.
Place a dumpling wrapper on a plate. Dip your finger in water to make it wet, and apply the water around the edge of the dumpling skin. The water helps the dumpling wrappers stick together.
Take out 1 Tbsp of the corn mixture and put it on one side of the dumpling wrapper.
Fold the dumpling wrapper in half to make a half moon shape. And then, seal it with a fork by pressing down along the edge of the wrapper. The fork also gives the edge a pretty pattern.
Use the same process to make the rest of the dumplings. You will get about 20 dumplings.
In a heated pan with a generous amount of cooking oil, place some of the dumplings.
Fry them for about 3 minutes on medium or until they become nicely golden brown and then flip them over to fry for another 3 minutes. Be careful not to use too high of a temperature or fry them too long, or the cheese can come out from the dumplings and get burnt.
You can enjoy just as it is. The melted cheese and corn in crispy dumpling wrappers is just amazing.
