A few weeks ago, I posted a recipe for corn cheese dumplings and some people already tried and loved it. Then, one of the comments I got asked me if I can share a recipe for homemade dumpling wrappers because she wanted to try my recipe, but cannot get store bought dumplings around her. I thought there might be more people like her who cannot get dumpling wrappers easily, so I created this recipe and I’m very excited to share it with you today. It takes some labor, but it only has 3 ingredients. The texture and flavor is even better than store bought ones according to my husband. lol So let’s get started.

Hi! Welcome back to Aeri’s kitchen. A few weeks ago, I asked you this question in my community tab, “What would you like to see the most on Aeri’s Kitchen in 2018?” 72% of the people voted for lunch box recipes and ideas. So, I’m going to post many more lunch box recipes this year. The second most voted option was vegetarian recipes, with 18% of the vote. Along with that poll result, today I want to share my homemade vegetable broth recipe with you. Whether you are a vegetarian or not, it is nice to have good homemade broth on hand, so whenever you cook some kind of Korean food, especially soup or stew, you can grab some from your refrigerator or freezer. Many of my soup and stew recipes have steps for making broth with either anchovies or meat. You can replace those non-vegetarian broths with this vegetarian broth. It is easy to make, and it does enhance your Korean food. So, let’s get started.

It is still hot these days, but did you notice that some trees are already starting to change colors and some nights are cooler? I can feel that before long, we will see the beautiful fall season. When I think of cold weather, I can easily think of warm noodle soup. So, today I want to show you how to make a kind of Korean homemade noodle called KalGukSu. Kal means knife and guksu means noodles. You knead the dough, roll it out, and then cut it into thin noodle strips with your knife. That’s where the name came from. If you buy this type of noodle in a Korean grocery store, it is about 6 dollars a pack for 4-5 servings. When I consider the price of the main ingredient, flour, we can save good money by making it at home. Plus, it can be healthier too. For this recipe, I will just share the noodle recipe, but later, I will also share a delicious kimchi kalgusu recipe using these noodles. Stay tuned for it. Hi! Is everyone having a good summer? Like other mothers, I’m very busy during my kids’ fun summer vacation. Anyway, I hope everyone has a healthy and enjoyable summer. Today I would like to introduce a recipe that many people will be delighted with. It is pickled radish, which is a necessary ingredient for kimbap. In it’s name, “단” means “sweetened” and “무지” means pickled radish. So, as the name implies, this radish is sweet, sour, and savory like pickles. This makes Kimbap more delicious with other ingredients. I tried to make this two different ways. One is using saffron and the other is using turmeric to color it. It was my goal to make a healthy and delicious version that does not contain chemicals, and I finally achieved that goal. So I am very happy to share this recipe.

Acorn jelly, called “DoToRi” in Korean, is a popular Korean ingredient. As the name implies, it is a jelly made with acorn starch. It is a firm jelly, very similar to gelatin, but does not contain any animal products, which makes it good for vegetarians. Acorn jelly itself is a little nutty and bitter, so it is best to eat this with something else, rather than by itself. There are several very delicious Korean dishes using acorn jelly. I will introduce them one by one in the future. People believe that acorn jelly is a good diet food since it is low in calories. It is easy to find in Korea, so most people buy it from a grocery store, or when eating an acorn jelly dish in a restaurant. However, the only thing I can find in America is acorn starch. It is nice to share this homemade acorn jelly recipe with others who, like me, cannot buy pre-made acorn jelly. Try it someday.
