Just yummy Korean food this time. Kimchi fried rice. Like Kentuky Fried Chicken, only different. 😀 For delicious fried kimchi rice, I want to tell you several things. First, good kimchi makes yummy fried kimchi rice. Well fermanted kichi is the best. Another thing is..Frying the kimchi first is important – don’t cheat. 😛 I prefer to fry my rice a little crispy which takes longer to cook. (patience … hehe) You can add more sugar or salt depending on your taste.
Yield: 2 Servings

- SikDahng (식당) = Restaurant
- EumSik (음식) = Food

Main Ingredients
- 2 Cups Cooked Rice
- 1 Cup Kimchi
- 2 tsp Sugar
- ½ tsp Salt
- 2 Tbsp Kimchi Liquid
- 1 Tbsp Cooking Oil
- ½ tsp Sesame Oil
- 2 Eggs
- Some Sesame Seeds (to garnish)
Directions
Cut 1 cup of kimchi to bite sized pieces.
Add about ½ Tbsp of cooking oil in the heated pan and fry the kimchi. Add 2 tsp of sugar and fry for about 5 minutes on medium-high.
Add 2 cups of cooked rice and ½ tsp of salt. Add 2 Tbsp of kimchi liquid and ½ Tbsp of cooking oil. Fry 10 more minutes.
When the rice gets enough kimchi flavor, add ½ tsp of sesame oil. Then fry 2 more minutes.
Fry eggs separately. (Add salt to taste) You can also fry them in the rice. If you want to fry the egg in the rice, break the eggs in a bowl and stir as you do for scramble eggs. Pour the egg in the fried rice and stir. When the eggs are cooked, its’ done.
Place the fried eggs on the plate, and put the rice on top of the eggs.

I’ve made kimchi fried rice before and i didn’t like it. It doesn’t have a lot of flavors. I had to add soy sauce to give it some flavor. Do you know another way to cook kimchi fried rice?

If you make your own kimchi at home..or buy it from store.. usually the jar that you keep your kimchi will have kimchi liquid too.. yes.. it’s not a lot..but you get some ^^ hehe.. thanks

hi aeri, i just made kimchi using your recipe few days ago and according to your video it will be well fermented in a week’s time right? so i was searching for dishes which i can cook with kimchi and ended up watching this 😀
anyway, just one quick question. Do i use freshly cooked rice or rice left overnight? because for chinese fried rice, we usually use rice left overnight instead of freshly cooked ones.

I hope your kimchi turns out great.. it can be a little different depending on the temperature of your refrigerator..but yes.. usually.. about 1 or 2 weeks.. it will be fermented.. You can use both freshly cooked rice or left over rice.. it doesn’t matter much.. fried rice is good dish to use left over rice.. but for the taste.. I will say.. not much different.. thanks 🙂

there is no rule when you can eat… because some people like to eat fresh..and some people like to eat old.. sour kimchi… so…. it’s hard to tell it.. but typically.. in week or 2 weeks.. the fermenting process will be the best for the flavor.. thanks..

yes.. “bokkeum” means “fried”..not deep frying.. it’s just frying things with a little bit of oil. “jorim” means you cook (fry) something with some broth.. or oil.. water.. with seasonings.. and while you are cooking.. the broth (liquid) will be reduced mostly.. that’s jorim.. ^^ Nice to meet you.

Bokkeum means fried.. it can be adjective and noun.. so it’s more like.. explain what the status of something.. in this case.. usually food.. ex) fried rice.. (bokkeum Bab)
“bokki” is describe of the action… “fryihg” .. so tteokbokki means.. frying sticky rice cakes..

I was trying to figure out the meat used but I can’t seem to place my tongue on it. It was cut up pieces of beef or pork, not quite sure. Can you tell me what what kind of meat you would add? well.. it’s hard to guess without tasting it.. I liked to add.. some chopped ham in it for my kimchi fried when I was in Korea.. korean ham taste a little different from normal American ham..anyway.. I guess.. they (the restaurant you tried) used pork for the fried rice…

I’m making thai style fried rice tonight but I’d LOVE to try this Korean version too. I love Korean food. What exactly is kimchi liquid? There are only few kimchi (store) brands here in Finland available and the one I use doesn’t have any liquid in the jar. What should I use instead?

Some people add hot pepper powder, or hot pepper paste… but personally I prefer more kimchi flavor to my kimchi fried rice.. what you can do is.. add more kimchi instead of kimchi broth.. ^^ thanks

I made this kimchi fried rice twice with some modifications:
* omitted the salt and sugar, and put in soy sauce and gochujang.
* added some spam, king oyster mushrooms and onion..all diced up.
* first time I made a sunny side up egg and second time I scrambled an egg and mixed it into the fried rice.
* no sesame seeds, so I replaced it with some korean seaweeds which has toasted sesame seeds in it.
The results was amazing! Thanks for the recipe Aeri, though I adjusted your recipe but the inspiration came from you! 🙂
