Hi everyone! How are you? I hope everybody is great. I’ve been busy settling down with my family after we moved to a new state. Things are less busy now, and I’m back in my kitchen. yay~~~ So, I will try to post more recipes now. I’m sorry for my slow posting and I appreciate all your comments, so please feel free to talk to me through my blog. The cooler weather is bringing in soup season. So today, I want to share a simple, yet delicious, homemade rosemary potato soup. My husband bought rosemary potato soup in a store and really liked it. I tried making it at home. It is not quite the same as the one from the store, but my husband was happy with the result. The creamy rosemary flavored soup with chunky vegetables is too good to miss for this time of year. Try it someday. 🙂

Main Ingredients
- 2 Cups Potato
- 1 Cup Onion
- ¼ Cup Carrot
- ¼ Cup Celery
- 1 Tbsp Garlic
- 2½ Cups Water
- 1 Cup Milk
- ¼ Cup Flour
- ¼ Cup Salted Butter
- 1 Generous tsp Dried Rosemary
- ½ Tbsp Salt
- ½-1 tsp Sempio Yondu (Optional)
Directions
Finely dice the vegetable ingredients: 2 cups potato, 1 cup onion, ¼ cup carrot, and ¼ cup celery. Dice the potato and onion. Mince 1 Tbsp worth of garlic.
Melt ¼ cup of salted butter in a heated pot.
Add the garlic into the pot and fry for about 30 seconds on medium.
Add 1 generous tsp of dried rosemary into the pot and fry for about 2 minutes on medium.
Add the chopped vegetables into the pot.
Also add about ½ Tbsp of salt into the pot and fry for about 5 minutes on medium.
5 minutes later, add ¼ cup of flour into the pot.
Then mix everything quickly.
Right after that, pour 2½ cups of water and 1 cup of milk into the pot.
Once it starts to boil, cook for about 15 minutes on medium, or until the potatoes are done cooking. Occasionally stir it.
If you want to make more flavorful soup, you can add about ½ to 1 tsp of Sempio Yondu at the end of the cooking process. In this case, you may want to reduce the amount of salt since Yondu has sodium in it.
Without Yondu, the soup is still good, but if you have Yondu at home, try it for this soup. You will see how much it improves the flavor of your soup. 🙂 My son liked it too, so this can be kid friendly food. Enjoy!

Thank you very much for your website. I just remodeled our galley kitchen and have started to learn new dishes to prepare. We are having some very good Korean friends coming from Korea to see us and I want to use Korean food for one of the meals. I want to make the Rosemary soup as I raise herbs in our garden. We do not eat shell fish. What would you suggest for additional side dishes and a main course?
If you ever come to New Zealand, we would love for you to come visit us. I am an American from Texas but now live in N.Z.

About your question, rosemary potato soup is not a Korean food. (just in case you confused it.) ^^:; Every now and then, I post some western style food too. So the soup will match with any kind of western main dish and side dish or salad. Wow, you are living in N.Z. That’s cool. I love to see your new kitchen. 🙂 Thanks

Yes living in N.Z. now, but born and raised in Texas.
Hope you do come see our new kitchen. It has a double oven, a steam oven, and an
induction hob. So easy to keep clean. The counter tops are a basic white quartz, which is harder than stone. The wall paper is gold with ivory wood trim. The floor is Tasmanian Wattle and a light colored grain. I installed a beautiful fruit mural behind the hob and added accent tiles as well for the splash back around the counters. Pots and pans are hung on a beam which makes easy access. Cabinets have soft close hinges. Do hope you will come see it and we can do some cooking together……great fun.
We have a huge organic garden as well as a herb garden, so most of our food is very fresh.
The previous kitchen was over 50 years old so we are very happy to have remodeled it.
