Hi Everyone. Today, I will share a very tasty snack food that brings back good memories from hometown. My hometown, Gwangju, has a popular bakery called “Gongjeon Jegwa” which can be translated as “Palace Bakery.” It started as a local bakery and has now grown into several branches. One of their signature breads is this “GongRyongAl” which means “Dinosaur Egg.” Oh don’t worry or be scared – it doesn’t have any dinosaur eggs in it. lol It is a famous and popular bread that I ate while growning up. I wanted to make it at home, and this recipe is what I came up with. It was a huge success and my Korean family members told me it’s even better than the one the bakery makes. yay ~~~ 🙂 The flavor is almost the same, so I’m happy with the result. Now I can make it anytime, anywhere when I get hungry for it. The fresh french baguette filled with this yummy egg salad and other ingredients will give you a very pleasant experience. Try it someday.

Short Korean Lesson

Main Ingredients
- 1 Loaf French Baguette (12 Inches)
- 8 Hard Boiled Eggs
- ⅔ Cup Seedless Cucumbers (¼ tsp Salt)
- ½ Cup Korean Crab Sticks
- ½ Cup Sweet Pickles
Sauce Ingredients
- 6 Tbsp Mayonnaise
- ½ tsp Sugar
- ⅛ Generous tsp Salt
Directions
Obtain ⅔ cup worth of cucumber. Roughly peel off the skin, leaving some of the nice green color on it. Slice it very thinly.
Mix the cucumber slices with ¼ tsp of salt. Set it aside for about 5 minutes.
5 minutes later, squeeze out the water. You will get about ⅓ cup of salted cucumber now.
Obtain 8 hard boiled eggs and peel off the shells. Separate the egg yolks from the whites and chop the egg white into ¼ inch chunks.
Obtain ½ cup of Korean crab stick and ½ cup of sweet pickles such as bread and butter pickles. Chop them into ¼ inch chunks.
In a large mixing bowl, combine all the chopped ingredients, salted cucumber, and the egg yolks. Break the egg yolks apart with your fingers. The egg yolk will get mixed better later while you are mixing all the ingredients with the sauce, so you don’t have to worry about breaking them that much in this step.
Add all the sauce ingredients into the bowl: 6 Tbsp mayonnaise, ½ tsp sugar, and ⅛ generous tsp salt.
Mix everything well so that all of the flavors will get combined together. In this step, you can taste it and can add more salt, according to your tastes.
Obtain 1 fresh loaf of French baguette. This tastes best when the bread it freshly made.
Cut it into 2 inch pieces. You will need 6 pieces for this recipe.
Dig out some of the soft bread from the center gently using your fingers. It is kind of like what they do for a bread bowl, so make sure that you don’t poke any hole in the bottom. lol
Divide the filling mixture into 6 portions. Put each portion of the filling in one baguette bowl. To do that, take a spoonful of the filling and put it in the bread. Push down on the filling, and then put some more on top. Fill the bowl all the way to the top and make a dome shape.
You can serve it as it is now if you are going to eat immediately. If you want to eat it later, or take it to somewhere like pot-luck or picnic, wrap it with plastic wrap. Actually, that is the way the bakery sells them in my hometown.
