Today I will share a simple and delicious way to use up ingredients in your refrigerator. We will make egg dumplings called “DalGyal ManDu” (달걀 만두) in Korean. These egg dumplings have a soft, chewy, and crunch texture with a good combination of flavors from various ingredients. They are fun to make and look appetizing. Main Ingredients:
- 3 Large Eggs
- 2 oz Cellophane Noodles
- 3 Tbsp Green Onion
- 2 Tbsp Onion
- 1 Tbsp Carrot
- 1 tsp Red Hot Pepper (Optional)
- ⅛ tsp Salt
- Some Cooking Oil for Frying
Seasoning Ingredients for the Noodles:
- 1 tsp Soy Sauce
- ½ tsp Sesame Oil
- 2 Pinches Black Pepper
Dipping Sauce Ingredients:
- 1 Tbsp Soy Sauce
- 1 Tbsp Water
- ¼ tsp Vinegar
- ¼ tsp Sugar
Directions
First, we need 2 oz of these dried cellophan noodles called “DangMyeon” in Korean.
In a boiling water, cook the noodles for about 8 minutes on high.
Meanwhile, we can prepare the rest of the ingredients.
Finely chop all the vegetable ingredients: 2 Tbsp of an onion, 3 Tbsp of a green onion, 1 Tbsp of a carrot, and 1 tsp worth of a red hot pepper. Other veggies work well too, such as zucchini, potato, mushroom, garlic chives, perilla leaves, etc., but onion and green onions are really important for good flavor.
Break 3 large eggs and whisk them gently.
Add the chopped veggies into the egg mixture along with ⅛ tsp of salt. Mix it all together. If you are not going to eat this with any dipping sauce, you can add more salt instead.
When the noodles are soft and done cooking, take them out. Chop the noodles a few times with scissors.
Season the cooked noodles with 1 tsp of soy sauce, ½ tsp of sesame oil, and 2 pinches of black pepper when the noodles are still hot.
Mix it well. It looks colorful. 🙂
Put the seasoned noodles into the egg mixture.
Then mix it up one more time.
By the way, I finally replaced my nonstick pans with this Lodge Cast Iron Griddle and absolutely love it. It works as great as a non-stick pan, and actually it is even better for cooking. Although, it is cast iron pan, it is not that heavy, which is an extra bonus point. It is healthier than nonstick pans. I’m also happy that I do not have to buy new nonstick pans over and over again when the coating starts peeling off. Anyway, I want you try this particular one – you will love it too.
Anyway, let’s get back to cooking now. In a heated pan, add about 1 Tbsp of cooking oil. Put a big spoonful of the batter in the pan and spread it out into a circle, or oval for a prettier shape.
Fry them for a minute on medium-high, and then fold them in half. Reduce the temperature to medium. After folding it, you will have some more space in your pan, so make some more. You will get about 10 pieces from this recipe.
Fry both sides until they become golden brown. It will take about 4-5 minutes.
You can make a soy dipping sauce by simply mixing 1 Tbsp soy sauce, 1 Tbsp water, ¼ tsp vinegar, and ¼ tsp sugar. These egg dumplings can be an appetizer, side-dish, or snack food for kids. Please try them someday. 🙂
