Hi, today I will share a fancy way to enjoy Korean instant noodles, RaMyeon, using Korean soft tofu, SunDuBu. If you love to order SunDuBu JjiGae at a Korean restaurant, now you can make a simple version of it at home by using this recipe. The soft tofu with the spicy noodles and broth are tasty together.

Main Ingredients:
- 1 Pack Spicy Korean Instant Noodles
- 1 Pack Korean Soft Tofu
- 1¾ Cups Water
- 10 Clams
- 1 Egg
- 2 Tbsp Green Onion
- ½ Tbsp Red Hot Pepper (Optional)
Seasoning Ingredients:
- ½ Tbsp Hot Pepper Powder
- ½ Tbsp Sesame Oil
- 1 Tbsp Green Onion
- ½ tsp Garlic, Minced
Directions
Get 1 pack of soft tofu and cut ¼ of it off.
Slice the smaller chunk into ¼ inch thick pieces. We will use these for garnishing later.
Scoop out the rest of the tofu with a spoon into several big chunks.
Cut 2 Tbsp worth of a green onion into 1 inch pieces, finely chop 1 Tbsp of green onion, thinly slice ½ Tbsp of red hot pepper, and mince ½ tsp of garlic.
You can put a whole egg into the RaMyeon, but for better presentation, I like to separate the egg white and yoke.
To make flavored oil, drizzle ½ Tbsp of sesame oil in a heated pot, then add ½ Tbsp of hot pepper powder and the finely chopped green onion.
Fry it for about 20 seconds on medium-high.
This is a pack of Korean instant noodles. It contained the dried noodles, a pack of seasoning powder and a pack of dried ingredients.
30 seconds later, pour 1¾ cups of water into the pot. Once the water starts to boil, add the seasoning powder and dried ingredients.
Bring it back to a boil and add the noodles. Cook the noodles for about 4 minutes on medium-high.
If you want to upgrade the flavor of your RaMyeon, you can add some seafood such as: squid, mussels, and shrimp. Today, I will use 10 clams.
When the chunk of noodles becomes loose, add the egg white into the broth.
Next, add the clams.
Then, add the soft tofu from the package and continue to cook.
When about 2 minutes are left for the noodles to be done cooking, add the green onion, red hot pepper, and the egg yoke.
Finally put the soft tofu slices next to the egg yoke and finish cooking it for 2 minutes. Depending on your preference for the texture of the cooked noodles, the noodles can be cooked longer or shorter.
The nutty soft tofu gives great texture and flavor along with the spicy and savory broth and chewy noodles. You will be surprised how these instant noodles can turn into a Korean SunDuBu JjiGae flavored noodle dish. 🙂 Please try this hearty noodle dish during these cool fall days.
