Egg fried rice (계란 볶음밥, GyeRan BokkEumBap) is a Korean style fried rice dish. It is a very good recipe to try when you do not have enough time, or if you do not feel like cooking much. With only few ingredients such as rice, eggs, and green onions, you can make very tasty meal quickly. This can be used as a main dish with kimchi and other side dishes, or it can be used as a side dish even though it is not an authentic Korean style meal. If you reduce the amount of salt or oil, this can be good for a kid’s meal too. If you do not know what to cook tonight, then maybe you can try this recipe – if you have eggs, rice, and green onions on hand. 😉
Yield: 2 Servings
Short Korean Lesson
- Bom (봄) = Spring
- GahEul (가을) = Fall
Main Ingredients
- 2 Cups Cooked Rice (10 oz)
- 2 Eggs (+ 2 Pinches Salt)
- 2 Tbsp Green Onion
- 1 tsp Sesame Seeds
- ½ tsp Salt
- 3 Tbsp Cooking Oil
Directions
Finely chop 2 Tbsp of green onions.
Prepare 2 cups of cooked rice, or about 10 oz.
In a heated pan with 1½ Tbsp of cooking oil, add the cooked rice and a ½ tsp of salt. Fry it for 5 minutes on high.
Meanwhile, break 2 eggs and add 2 pinches of salt.
After 5 minutes, push the rice to one side of the pan to make some space to cook the eggs. Add 1½ Tbsp of oil.
Pour in the egg mixture, and stir to make scrambled eggs.
For several minutes, fry the eggs until they are done.
Mix the fried eggs with the rice. In this step, if the rice seems too dry, you can add some more oil. You can adjust the saltiness also.
Add 2 Tbsp of finely chopped green onions and fry 3 more minutes before turning off the heat.
Optionally sprinkle 1 tsp of sesame seeds.
I like to eat this with either Korean style soybean paste soup or Japanese miso soup. Enjoy this recipe. Thanks. 😀

Aeri Lee says
hi Jing Yerkic,
Nice to meet you. I didn’t know the English name, taro in Korean.. so I researched it.
“South Korea
In South Korea, it is called toran (Korean: 토란: “egg from earth”), and the corm is stewed and the leaf stem is stir-fried. Taro roots can be used for medicinal purposes, particularly for treating insect bites. It is made into the Korean traditional soup toranguk (토란국). Taro stems are often used as an ingredient in yukgaejang (육개장).-wikipedia-”
In Korea.. usesually they sell.. already boiled in the market.. but yes you can find it in a store.. ask them “torahn dae” 토란대
