Hi Aeri’s Kitchen friends. Did you enjoy the beautiful fall leaves? The colorful leaves are falling down and nature seems to be preparing for the winter. Around this time of year, what do you think of the most? What are you craving? The answer from my husband was his grandmother’s pumpkin bread. It is so simple to bake, yet it is amazingly delicious. We all love it so much. I thought of you, my precious Aeri’s Kitchen friends, and I decided to share this family recipe with you. Thanksgiving is coming, although it might not be a typical year for all of us due to the pandemic. I hope you can bake this delicious pumpkin bread at home and enjoy it with your own family this Thanksgiving holiday.
Yield: 2 Loaves
Short Korean Lesson
- ChuSu (추수) = Harvest
- DdangKong (수확) = Harvesting
- 1 Can Pumpkin (15 oz)
- 3 Cups All Purpose Flour
- 2 Cups Sugar
- 1½ Cups Cooking Oil
- ¾ Cup Chopped Pecans
- 4 Eggs
- 2 tsp Baking Powder
- 2 tsp Baking Soda
- 2 tsp Cinnamon Powder
- 1 tsp Salt
First, preheat your oven to 350 F. Then, combine all the dry ingredients: 3 cups all purpose flour, 2 cups sugar, 2 tsp baking powder, 2 tsp baking soda, 1 tsp salt, and 2 tsp cinnamon powder.
Mix it all together.
Break 4 eggs and whisk them gently.
We need 1 can (15 oz) of pumpkin, or about 1½ generous cups.
Add 1½ cups of cooking oil to the flour and then add the
While beating, slowly add the eggs.
Mix everything and make sure that all the flour on the bottom of the mixing bowl gets blended in. A spatula work greats for this.
Finally add ¾ cup of chopped pecans,
and mix it one last time.
Prepare 2 nonstick baking loaf pans. You do not need to grease or flour the pans for this recipe.
Pour half of the batter into each pan. Flatten out the batter on the top.
Bake the bread for about 50 to 55 minutes.
When you poke the center of the bread with a toothpick, and if it comes out clean like this, it means that the bread has been baked perfectly.
Transfer the bread to the baking rack to cool it down.
Once the bread has completely cooled down, you have to wrap the bread tightly with plastic wrap to keep it soft and moist. This bread can dry out easily. You can also freeze the bread.
If you want to give this delicious pumpkin bread as a gift to somebody, this Wilton Loaf Gift Kit is my suggestion.
The kit contains 8 clear plastic bags with a pretty Autumn design, 8 tags, and 8 ties.
So, simply put the loaf in a bag,
write a name on the tag, and tie the bread bag like this. I gave this bread to my Korean friend, and her family loved it a lot. My friend and her husband both told me that I should sell this bread somewhere – they liked it that much.
I will slice the bread to show you the inside. You can see this beautiful orange pumpkin color inside and a thin layer of crispy golden brown bread outside. It is a sweet and nutty bread with the a fall flavor from the pumpkin and the cinnamon. Please bake this pumpkin bread someday for somebody you love.
