In Korea these days, folding kimbap is very popular as seen in social media. There are many different versions out there. Although it is a Korean food, I thought a California roll version would be great. So, today I’m going to show you how to make folded California rolls. It is simple and fun to make. The flavor is amazing – you can be just as satisfied with it as going to a sushi restaurant. 🙂

Short Korean Lesson

- 4 Sheets Dried Laver for KimBap
- 1⅓ Cups Cooked Short Grain Rice
- 1 Avocado
- ½ lb Seedless Cucumber
- 4 Korean Crab Sticks Strips
- Some Soy Sauce (For Dipping)
Sushi Rice Seasoning Ingredients:
- 1 Tbsp Vinegar
- ½ Tbsp Sugar
- ⅛ tsp Salt
Spicy Mayo Ingredients:
- 1 Tbsp Mayonnaise
- ½ Generous Tbsp Ketchup
- 1 tsp Sriracha Hot Chili Sauce
- 1 Pinch Paprika Powder
First, let’s make a delicious spicy mayo dressing that you can use for different kinds of sushi. Simply combine 1 Tbsp of mayonnaise, ½ generous Tbsp of ketchup, 1 tsp of sriracha hot chili sauce, and 1 pinch of paprika powder.
Mix everything together. The sriracha sauce is the key flavor for this dressing.
Next, we will prepare three filling ingredients.
Cut a seedless cucumber into the length of half a sheet of dried laver (about 3 inches), then cut it into about ⅛ inch slices.
Shred 4 Korean crab sticks.
For the avocado, divide it in half,
Tap the seed with a knife, twist it, and it will come out easily like this.
You can easily peel off the avocado skin using a spoon.
Slice the avocado into ⅛ inch thick strips.
Now, we will make the sushi rice. Mix 1 Tbsp of vinegar, ½ Tbsp of sugar, and ⅛ tsp of salt. Stir it until all the sugar dissolves.
Obtain 1⅓ cups of freshly cooked short grain rice and drizzle the vinegar mixture over it.
Mix it gently and divide the rice into 4 portions.
Prepare 4 sheets of dried laver for kimbap. Now all of the preparation is done, and it is time to fold it.
Cut half way through the middle of the dried laver so that we can fold it later.
Put 2-3 cucumber slices on ¼ of the laver sheet.
Next, put one portion crab meat on it and drizzle some of the dressing over it.
Put some avocado slices next to the crab meat.
Finally, spread one portion of the seasoned rice evenly in the last section. Please follow that order so that you will get the best result in shape and flavor.
Now all we need to do is fold it. Fold the cucumber section over the crab meat section.
Then fold that section over the avocado section.
Finally, fold that section over the rice section. Gently press down on it to form the shape.
To make it easier to eat and dip in soy sauce, it is nice to cut it in half diagonally.
