Hi everyone! Today, I will make a quick and simple yet super delicious stir-fried noodle dish using udon noodles, shaved beef, and veggies. It is called 차돌박이 우동볶음 in Korean. I love the soft and chewy texture of the noodles, along with the crunchy feeling of the vegetables. It also has a combination of the savory flavor with a little bit of spice to it. The nutrition, color, flavor, and texture of this dish are all well balanced.

Main Ingredients:
- 1 Pack Udon Noodles (8 oz)
- ½ lb Shaved Beef (2 Pinches Salt, ⅛ tsp Black Pepper)
- ½ lb Fresh Mung Bean Sprout (1 Cup Cooked)
- 1 Cup Cabbage
- ½ Cup Onion
- ½ Cup Green Onions
- 2 Tbsp Red Hot Pepper
- 2 Tbsp Garlic Cloves
- 1 tsp Sesame Seeds
Sauce Ingredients:
- 2 Tbsp Oyster Sauce
- ½ Tbsp Cooking Oil
- 2 tsp Soy Sauce
- ½ tsp Sugar
- ¼ tsp Vinegar
- ⅛ tsp Black Pepper
Directions
Start to boil some water in separate pots for both ½ lb of mung bean sprout and 8 oz of udon noodles.
Meanwhile, prepare the veggie ingredients such as 1 cup of cabbage, ½ cup of an onion, ½ cup of green onions, 2 Tbsp of red hot pepper, and 2 Tbsp worth of garlic cloves.
Chop the cabbage, the onion, and the red hot pepper into thin 2 inch strips. Cut the green onions into 1 inch pieces and slice the garlic cloves thinly.
Prepare the mung bean sprouts by removing any bad parts and rinse them in cold water.
Set the mung bean sprouts in the boiling water and cook it for about 2 minutes on medium-high.
We also need 1 pack of udon noodles. I got frozen ones at a Korean grocery store.
Add the noodles in the boiling water and cook it for about 2 minutes on medium-high.
For the delicious sauce, we need 2 Tbsp oyster sauce, ½ Tbsp cooking oil, 2 tsp soy sauce, ½ tsp sugar, ¼ tsp vinegar, and ⅛ tsp black pepper.
Mix all the ingredients together.
On a heated pan or wok, put the ½ lb of shaved beef and season the beef with 2 pinches of salt and ⅛ tsp of black pepper. Brown the meat on medium-high.
Add the chopped cabbage, onion, and the garlic slices to the beef along with about half of the sauce. Stir fry it for about 2 minutes on high.
When the noodles are done cooking,
Rinse the noodles in cold water once or twice. This will help to get a nice and chewy noodle texture.
Now add the cooked mung bean sprouts, noodles, green onions, and red hot pepper. Then put rest of the sauce mixture to the pan.
Stir fry for 2 more minutes and then sprinkle 1 tsp of sesame seeds.
