The black bean paste, called chunjang (춘장) is made from roasted soybeans. When it is unheated, it is called chunjang (literally “spring paste”), while the heated sauce (containing vegetables and meat or seafood) is called jajang (literally “fried sauce”). Onion dipped in the sauce also taste good. Koreans use this paste for balck bean noodles. (JaJangMyun=자장면)

Thank you for your reply. It is almost impossible for me to find black bean paste in France. I got some when travelling to Korea so my jajang packages are like precious treasure for me^^. I was afraid i would have to throw the remaining jajang away, or eat jajangmyun for an entire week! Happy new year!

I have the black bean paste (fermented ) in a jar. Sometimes my kids like to eat it but without veggies, just noodles or rice. How do I just make the sauce without vegetables? Please I’ve looked everywhere.

It tastes good and it also healthier to have vegetables in it. How about this ? Chop all the vegetable and meat ingredients into real fine pieces.. make almost like it’s just sauce with tiny chunks.. that will be better for kids to eat the vegetables. Actually there are some Korean-chinese restaurants in Korea.. have this black bean paste sauce that way.. it’s a little different but taste good.. so I recommend you try that method instead of giving up vegetables in it. Thanks..

If you didn’t open the package yet, it can last as long as the expiry date is on the package.. or even longer.. However, once you open it, I will suggest to keep it in the refrigerator right away. 🙂

Is there a difference between 춘장 and 자장? If I’m understanding this correctly, 자장 is already fried, removing the initial bitterness? I think I have 자장 sauce so do I still need to fry it?
Also I don’t have cabbage, what other vegetable can I used to make 자장면?

춘장 is black bean paste (ingredient name) to make jajang (자장) noodles. so it’s just the pure ingredient .. if you fry the 춘장 and cook with other vegetable and meat ingredients..it becomes 자장… yes.. if you fried 자장 sauce (=춘장) , you can continuously cook it with other vegetables.. you can skip the cabbage and add more vegetables such as potato..onion.. zucchini.. whatever you like… but for jajang.. onion gives the best flavor to the sauce.. thanks and sorry for late reply.
