Today, I want to share a new recipe that we enjoyed a lot recently – black bean burritos. My husband is a fan of Mexican food. He loves beans. On the other hand, I’m not a big fan of beans. When I made this black bean burrito recently, both my husband and I loved the flavor. I told my husband that I can eat this kind of beans easily. 🙂 It is very easy to make, but still has a great flavor combination. The creamy beans, vegetables, and burrito wrap is the perfect taste with spicy sauce. We found out that this burrito matches really well with smoked Tabasco chipotle sauce. 🙂

Main Ingredients
- 3 Large Burrito Wrappers
- 1 Can Black Beans (15 oz)
- ⅔ Cup Sweet Corn
- ⅔ Cup Onion
- ⅓ Cup Red Sweet Pepper
- ⅓ Cup Yellow Sweet Pepper
- ⅛ Cup Green Hot Pepper (Optional)
- 3 oz Cream Cheese
- 2 Tbsp Cooking Oil
- ½ Tbsp Garlic
- ¼-½ tsp Salt (Optional)
- Some Hot Sauce (Optional)
Directions
Rinse and drain 1 can of black (15 oz.) beans.
Drain ⅔ cup of corn.
Cut ⅔ cup worth of an onion, ⅓ cup worth of a red sweet pepper, ⅓ cup worth of yellow sweet pepper, and ⅛ cup worth of a green hot pepper into a similar size as the corn kernels. Mince ½ Tbsp of garlic.
Preheat a pan with 2 Tbsp of cooking oil. Add all the chopped vegetables to the heated pan. Fry for 1 minute on medium-high.
Add the black beans and corn to the pan. Fry for 3 minutes on medium.
Add about 3 oz of cream cheese and fry for another 2 minutes.
Stir it gently so that the cream cheese mixes evenly with other ingredients.
If you are going to use any hot sauce, skip the salt in this step since most hot sauce is already very salty. However, if you want to eat your burritos without hot sauce, add ¼-½ tsp of salt in this step. I highly recommend you try smoked Tabasco chipotle. It really goes well with this recipe.
When it’s done cooking, divide the bean mixtures into three groups.
Warm up 3 wheat burritos wraps. You can microwave them for a minute. Place one on a plate.
Put 1 group of the divided bean mixtures at the edge of the burrito. Leave about a inch of space on each end so that you can seal and roll the burrito better.
Fold the top to cover the bean mixture.
Fold both ends of the burrito in.
Roll the burrito.
Follow the same process for the other 2 burritos.
