This cold cucumber side dish, 오이 냉국, is a very refreshing summer dish. It is delicious with both cooked rice and noodles. Cucumbers and cold water seasoned with vinegar, sugar, and sesame seeds tastes cool and delicious. You can add soaked dried seaweed (미역=MiYeok=Wakame) also.

Main Ingredients
- 2 Cups Cucumbers
- 1½ Cups Water
- 1½ Tbsp Green Onions
- 1 tsp Green Hot Pepper (Optional)
- 1 tsp Red Hot Pepper (Optional)
Seasoning Ingredients
- 2 Tbsp Brown Rice Vinegar or Apple Vinegar
- 2 Tbsp Sugar
- ½ tsp Salt
- ½ tsp Soup Soy Sauce
- ½ Tbsp Sesame Seeds
Directions
Julienne 2 cups of cucumber thinly.
Thinly chop the green onions (1½ Tbsp) green peppers (1 tsp), and red peppers (1 tsp). These are hot peppers, but sweet peppers can be used instead to reduce the spiciness.
In a large mixing bowl, add the cucumber, 1½ cups of water, green onions, peppers, and all of the ingredients for the seasoning: 2 Tbsp vinegar, 2 Tbsp sugar, ½ tsp salt, ½ tsp soup soy sauce, and ½ Tbsp sesame seeds. Mix well until the sugar dissolves.
There are 2 ways of serving this side dish. You can make it several hours before you serve and chill it in the refrigerator. In that case, use 1½ cups of water as the recipes say. The other way is that you can serve right after you make it. In that case, use 1 cup of water, and add ½ cup of ice before serving.
When the ice melts, it will change the balance of the salt, sugar, and vinegar. So be careful about the amount of water in this recipe before you serve it.

my mom used to make this all the time when i was a kid growing up, she’d also put crushed ice in it, as well as these small japanese wheat noodles. now i make it when ever i have cucumbers in the house during the summer.
