Main Ingredients:
- 2 Cups Korean Radish (½ lb) (1 Tbsp Sugar + ½ tsp Salt)
- 4 oz Thin Dried Noodles (5 Cups Water + ½ Tbsp Salt)
- ¼ Cup Onion
- 2 Tbsp Green Onion
- 1 Hard Boiled Egg (For Garnish, Optional)
- Some Roasted Dried Laver (For Garnish, Optional)
- Some Green Onion (For Garnish, Optional)
Seasoning Ingredients:
- 1½ Tbsp Hot Pepper Powder
- 1 Tbsp Vinegar
- 1 Tbsp Sesame Oil
- ½ Tbsp Sesame Seeds
- 1 Generous tsp Fish Sauce
- ½ tsp Sugar (Optional)
- ¾ tsp Soy Sauce
Directions
Start by preparing ½ of a Korean radish, ¼ cup of onion, and 2 Tbsp of green onion.
Cut the Korean radish into 4-inch-long and ⅛-inch-thick sticks. Finely chop the green onions and thinly slice the onion.
Place the radish in a large mixing bowl. Season with 1 Tbsp Sugar and ½ tsp Salt. Mix thoroughly and let it sit for about 15 minutes. After 15 minutes, you’ll notice some liquid released from the radish—retain it, do not drain.
Now, add other seasoning ingredients: 1½ Tbsp Hot Pepper Powder, 1 Tbsp Vinegar, 1 Generous tsp Fish Sauce, and ¾ tsp Soy Sauce. Optionally, add ½ tsp Sugar to suit your taste.
Combine everything to create a flavorful MuSaengChae, perfect as a side dish.
In 5 cups of boiling water, add ½ tablespoon of salt and 4 ounces of thin noodles. Bring it back to a boil. Cook the noodles for about 5 minutes on medium-high heat.
While the noodles are cooking, prepare garnishes such as hardboiled egg, roasted dried laver, and finely chopped green onion.
Once the noodles are cooked, rinse them in cold water a couple of times and drain.
Add the cooked noodles to the radish side, MuSaengChae. Drizzle 1-2 Tbsp of sesame oil and sprinkle ½ Tbsp of sesame seeds.
Give it one final mix, and it is ready.
