In Korea, spicy cold buckwheat noodles (Bibim Naengmyeon) are as popular as the cold buckwheat noodle soup (Mul Naengmyeon) that I posted last time. I got many requests for this and mul naengmyeon over the years. Finally, I can post both of those two good recipes in a row, so I am very happy. Bibim means mixing something, naeng means cold, and myeon means noodle. We use the same toppings as mul naengmyeon: pickled radish, pickled cucumber, meat, hard-boiled egg, and Asian pear. An easy way to make this dish is to buy a package that has the noodles and sauce. However, if you make this the authentic way, it takes time and effort. Of course, the taste can’t be beat, plus it is healthier to make food at home. You can freeze the sauce and use it later. Summer is gone, but I hope you will enjoy this as much as I did.

It is great to combine the Korean flavor with Western food. If you have left over bulgogi, you can just use it instead of making the bulgogi below. This is another version of a Korean zucchini side dish. My sister-in-law gave me a very fresh zucchini from her garden the other day, so I made this delicious side dish. When I was a kid, I liked making a simple bibimbap with this whenever my mom made it. To make that simple bibimbap, mix some cooked rice, this side dish, red pepper paste, kimchi, a fried egg, and some sesame oil to make a wonderfully simple bibimbap. 🙂 If you are a vegetarian, you can skip the anchovies. And you can skip the hot pepper if you don’t like spicy food.

Sometime ago, I got a big box of Korean food from Sempio. I tried some of their products for this recipe and the result was good. I am happy to share this recipe with you. Seasoned and roasted Dried Laver (김 구이=Gim GuI) is a very common dried seaweed side dish for both meals and lunch boxes in Korea. You can buy this type of side dish in a Korean or Asian store. However if you only have normal dried seaweed, you can use this recipe to season and roast it easily at home. Homemade roasted seaweed is not only cheaper, but tastier as well. This recipe uses the dried seaweed that is used for kimbap or sushi, but typically normal dried seaweed for gimgui is a little thinner than the dried seaweed for kimbap. This tastes great with fresh rice.

Today, I will show you how to make an ingredient for Korean cooking – sticky rice cakes. They are commonly used for tteokbokki, tteokggochi, and tteokguk.
