Napa Cabbage GeotJeolI (배추 겉절이) is a common and simple daily side dish in Korea. Instead of napa cabbage you can use lettuce, bok choy, or another leafy vegetable. In a few minutes, you can prepare a very delicious side dish by just mixing some ingredients with the cabbage. A secret for a good tasting dish is to use baby leaves (soft) that do not have much of a bitter or strong flavor. Baby leaves also have a nice soft texture. If you get a head of napa cabbage, use the thick outer leaves for napa cabbage soup, and use the soft inside leaves for this recipe. 🙂

Army base soup, budae jjigae was originated during and after the Korean War, when Koreans had very little to eat. People made this dish by combining leftover Spam and hot dogs from U.S. Army facilities, and mixed it with whatever else was available. All of the leftovers were combined with water in a large pot and boiled. Nowadays, most Koreans have enough to eat, but this soup is still very popular with more varied ingredients added to it. Try it someday.

Triangle kimbap is a very popular food sold in convenience stores in Korea. For people who are too busy to prepare breakfast or lunch, this is a good option. Since the kimbap is wrapped in a disposable plastic package, it is easy to carry and eat wherever or whenever you want. There are many different types available; however, today I will only show you how to make two different types using tuna and kimchi. In a Korean grocery store, you can find the kit for making this triangle kimbap. Why not try making this simple and amazingly delicious kimbap at home? If you have kids, it will be fun to make this together with your children. I cannot wait to make these with my son, Bryson, someday. hehe

Napa cabbage soybean paste guk is a healthy and delicious daily soup in Korea. Napa cabbage is mainly used for making kimchi in Korean cuisine, but sometimes it is used for soup, side dishes, or as an ingredient in a main dish. When you make kimchi, you might throw away some of the Napa cabbage leaves since they are not fresh or good. You can use those Napa cabbage leaves instead of throwing them out. You can also buy a small Napa cabbage for just this soup. Try this someday.

JuMeokBap (주먹밥) can be translated as “fist bap,” or “fist rice.” The reason why it has that funny name is that this ball shaped rice looks like the shape of a fist. In the old days, when Korean people had to prepare simple and easy meals for the soldiers in the Korean war, this food was a great idea because it is easy to make and easy to take anywhere to eat. Later, it was also popular for people to take to their work place or school. Nowadays, there is a variety of “fist rice” dishes with differences in the ingredients such as beef, kimchi, seafood, tuna, dried anchovies, etc. Also, the size has became smaller and it has become more colorful, pretty, and flavorful. When you do not have much to eat, just mix some rice with a few other ingredients to make “fist rice,” and eat it as a meal. It would be very good in your lunch box with a few other side dishes and fruits. Enjoy!

Andong is the name of a Korean city, and this special dish is a very famous food from that area. It is also popular with many people that visit Korea. The braised chicken and vegetables with the sauce will make you fall in love with the flavor. I love, love, love this food. It is not too difficult to make from scratch, but if you have access to Sempio’s Braised Chicken Sauce, you can take a shortcut and follow my recipe using Sempio’s sauce instead. Both are delicious. Many people wanted me to make this dish from scratch, so here it is.

Spicy salted seaweed stem bokkeum is another delicious way to eat seaweed stems. I’ve posted non-spicy seaweed stem bokkeum before. Once you make this, you can serve it for several weeks as a side dish. For this recipe, I used Sempio Youndoo for flavoring. If you don’t have Youndoo, you can add a little bit of salt and/or soy sauce depending on your tastes. The slightly spicy and garlicky flavor makes this seaweed stem dish very tasty. Try it someday. 🙂
