This time it will be spicy Jang KalGukSu, which particularly famous as a regional food in GangReung, Korea. The Korean word “Jang (장)” refers to a seasoning made by fermenting soybeans, which is a main ingredient. Representative types of jang include soy sauce (GanJang,간장), soybean paste (DoenJang,된장), and hot pepper paste (GoChuJang,고추장). See? All those Korean foods have “Jang” in it. Today, I will share a tasty soup recipe using a very unique Korean ingredient, blood sausage. It is called SunDaeGuk in Korean. To be honest with you, I’m not a big fan of this Korean blood sausage and it is also difficult for me to find it in America. However, some of you requested it, so I kept watching for it to appear at a Korean grocery store. Finally, I found it recently, and I was excited. hehe So here we go, I can happily share my successful recipe for SunDaeGuk with you. Instead of the Korean blood sausage, you can be creative and replace the sundae with some other kind of meat (beef, chicken, pork, seafood, or even tofu) and still make a delicious soup.

Without any seafood or meat, which gives soup a rich savory flavor, you can still make delicious sundubu jjigae with just vegetable ingredients. It is healthy, easy, and tasty. Whether you are a vegetarian or not, it is nice to have good homemade broth on hand, so whenever you cook some kind of Korean food, especially soup or stew, you can grab some from your refrigerator or freezer. Many of my soup and stew recipes have steps for making broth with either anchovies or meat. You can replace those non-vegetarian broths with this vegetarian broth.
